Lion’s Mane Steaks: A Plant-Based Delight
Enjoy a delightful culinary adventure with these delicious Lion’s Mane Steaks – a plant-based delight that will mesmerize your taste buds. Crafted from three big Lion’s Mane mushrooms, these steaks boast a steak-like texture that will leave you pleasantly surprised.
Ingredients:
- 3 big Lion’s Mane mushrooms (about 1 lb/450 g total)
- 2 Tbsp vegetable oil or alternative
- Sage & Onion Seasoning
- 2 Tbsp BBQ seasoning
- Salt and pepper
- Butter or alternative
Instructions:
Preheat your oven to 400ºF with convection, or 420ºF without convection for optimal results.
Begin by trimming the bottom of the Lion’s Mane mushrooms to ensure they sit flat and can be cooked evenly.
Press out any excess moisture from the mushrooms, as this crucial step will help achieve a steak-like texture during the cooking process.
Heat a heavy, ovenproof skillet, such as cast iron, over medium-high heat. Once hot, add enough oil to coat the bottom. Place the mushrooms stem-sides down and let them cook for a minute or two to soften up. Then, add a second heavy skillet on top of the mushrooms to apply pressure and cook them for another minute or so.
For added pressure during the cooking process, you can use a towel or any suitable tool. Swirl in a little more oil as the mushrooms cook to enhance browning and flavor. Press and sear the first side for about 5 to 6 minutes until it’s nicely browned.
Flip the mushrooms with tongs or a spatula and add a little more oil, ensuring the mushrooms are well-coated. Press firmly until the other side is seared, browned, and pressed to less than half its original thickness, taking another 5 minutes or so.
Combine the BBQ seasoning and Sage & Onion seasoning. Sprinkle some of this delightful blend, along with salt and pepper, over the top side of the mushrooms. Flip and let it cook for another minute or two, adding a little more oil to enhance browning and flavor. Season the top side as well, and continue to flip and sear until both sides are slightly charred and crispy. You can adjust the thickness of the finished steaks by the amount of pressure you apply.
Once perfectly seared, transfer the mushroom pan to the preheated oven and let it cook for 10 minutes.
Remove the steaks from the pan to a cutting board, and return the pan to medium heat. Add butter, stirring and scraping to capture all the delicious flavor from the pan bottom. Stir in the BBQ sauce to create a medium-thick pan sauce.
Spoon some of the flavorful pan sauce onto your plates, ready to welcome the main attraction – the Lion’s Mane Steaks.
